Recipe  -  Tamale Casserole

Ingredients

800g (1.3/4lb) Minced Beef
1 Cup Chopped Onion
1 Cup Chopped Green Pepper
1 Cup Grated Tomato
1.1/2 Cups Whole Kernel Corn (Drained)
1 Clove Garlic (Minced)
1 Teaspoon Sugar
1 Teaspoon Sugar
1/2 Teaspoon Chili Pepper
1 Cup Grated Cheese
3/4 Cup Yellow Corn Meal
1/2 Teaspoon Salt
1 Tablespoon Butter or Margarine
2 Cups Cold Water

Instructions

Cook chopped onion and green pepper in a little hot fat until just tender. Add minced beef and brown lightly. Add tomato, corn, garlic, sugar, salt, and chili pepper. Simmer for 20 to 25 minutes, until thick. Add cheese and stir until melted. Poor into a greased baking dish and set aside.

Stir corn meal and salt into cold water. Cook and stir until very thick. Add butter and mix well. Spoon over hot meat mixture in length-wise strips. Bake casserole in moderate oven for about 40 minutes.
